This is a recipe that we really like and you can make it very fast with some pretty simple ingredients.
In a large bowl, combine the following:
½ cup heavy cream
8 oz grated cheese*
Salt and Pepper
Give it a quick stir to combine and add to the mixture:
2 cans (15oz) of DRAINED French Cut green beans
1-10oz bag of cleaned, fresh spinach, chopped coarse**
Broccoli (a pound of florets cooked-we use leftovers), substitute Cauliflower
Pour into a PAM-ed glass pan and bake at 350 for ½ hour.
Serves 4-6 (HAH! Sure it does…) For us, 2/3 of it serves the 2 of us for dinner and the other 2/3’s for breakfast the next day.
*I like to use the stuff in the supermarket that says something like Shredder Cheddar with Jalapeno. Also, if you have any other left over cheese around, throw that in there too. Any time you use cheese in a recipe, you get a much better result by combining 2 or more cheeses. Nicer flavor and better texture.
** Fresh spinach is too darned expensive. We have been buying bulk packaged, frozen spinach from BJ’s Club that is 3 Lbs separated into 3 packages. I add about ½ a package to the above recipe. It isn’t those damned “Frozen Spinach Bricks” that you get in the frozen food section of the supermarket. It is separated and nice to use.
